Recipe time: Roasted Cauliflower

Cauliflower is one of my favorites but, to save time I tend to steam it and eat it plain. And then, I found this recipe from the Unilever kitchen that takes very little prep time and I’ve been sold ever since!

Roasted Cauliflower

6 Servings

Prep Time: 10 minutes                         Cook Time: 45 minutes

  • 8 cups cauliflower florets
  • 3 Tbsp. Shedd’s Spread Country Crock® Spread, melted
  • 1 Tbsp. lemon juice
  • 2 cloves garlic, chopped
  • Pinch ground black pepper
  • 2 Tbsp. grated Parmesan cheese

Preheat oven to 400°. Arrange cauliflower, Shedd’s Spread Country Crock® Spread, lemon juice, garlic and pepper in 13 x 9-inch baking dish; toss to coat.

Roast 45 minutes or until cauliflower is golden and tender. Sprinkle with cheese.

Summertime Favorite Recipe: Savory Balsamic Asparagus

This Savory Balsamic Asparagus recipe is one of my all time favorites. It is easy to prepare and combines balsamic vinegar (I prefer aged balsamic vinegar which has a smooth, rich flavor) with in season asparagus.

Fresh from the Unilever kitchen:

Savory Balsamic Asparagus

  • 2 lb. asparagus, trimmed
  • 30 sprays I Can’t Believe It’s Not Butter!® Spray Original
  • 2 Tbsp. balsamic vinegar (optional)
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper


  1. Preheat oven to 425°.
  2. Arrange asparagus in roasting pan; evenly spray with I Can’t Believe It’s Not Butter!® Spray Original. Roast 15 minutes or until asparagus are crisp-tender. Drizzle with vinegar and season with salt and pepper. Serve warm or at room temperature.
